    Bethe got her start working in private county clubs in Farmington Valley & Hartford County. She worked in fine dining for the next 20 years. 10 years ago she moved to New London for a change of view. She is very excited to be joining our team.

    In her free time Bethe enjoys movies, reading, the beach and escaping to White Mountains with her husband every chance she gets.





  • Ryan Sirpenski, Executive Chef

    Ryan started his career in 2001 when he attended culinary school and quickly after, gained experience in several local restaurants.  He worked as a chef supervisor at an upscale assisted living facility and then in 2004 became a sous chef at Pfizer in Groton, CT.  He then moved on to become the chef manager at the Groton EB site in 2006 and most recently, was the chef manager at the Quonset Point EB facility.

    In the off work hours, he enjoys the outdoors and spending time with his family weather it be camping or an outdoor picnic.  BBQ grilling and smoking meats is also another passion of his.    


  • Sous Chef , Josh Dempsey

    Josh has worked in the food industry for 20 years and is happy to have found a place to land at EB New London. He was born in raised in South Florida (Go Phins!) and moved up to Southeastern CT 7 years ago to be closer to his wife’s family. He has 3 young children that he spends his free time with. They enjoy going to food truck festivals and their favorite New England Theme Park, Canobie Lake. He is an avid Beatles fan and has lots of music tattoos he is happy to discuss.
