Catering & Retail Manager Michelle Swanger
Michelle leads our Catering and Retail team, bringing 17 years of Eurest experience to the table-starting her career as a cashier at Mutual of Omaha and has grown with the company ever since. Outside of work, family is everything: she loves to cook for her 2 grown boys and enjoys a lively card game with her parents.

Fun fact: She received a company hero award for stepping up and covering two full time positions simultaneously.
Starbucks Manager Emily Moen
Working in coffee for 10 years, Emily leads and manages the Starbucks on campus. In her free time, she likes to play games, spend time with her husband and daughter, and do anything craft related – from painting to crochet.

Fun Fact: Emily and her husband are hobby board gamers. When last counted, they had over 100 board games, and the collection has only grown since then.
General Manager Adam Payson
Adam leads your Kiewit La Vista culinary hospitality team with 25 years as an Executive Chef and 8 years working with Eurest. When he is not at work, Adam’s time is most often spent with his wife of three decades, Amy, and with their seven children.

Fun Fact: He was the 2002 People’s Choice Award Winner at Sutter Home’s “Build a Better Burger” Competition in Napa Valley and his recipe was published in the book that followed!
